This is my go to smoothie for either breakfast, mid morning or mid afternoon snack time. It’s filled with slow burning nutrients that help keep my energy levels on a nice even level as well as keeping hunger pangs away. It’s also the perfect breakfast to have before a mid morning yoga class to keep my stomach feeling empty, yet at the same time giving me enough energy for my practice.
handful of spinach
1 stick of celery
1 tbsp chia seeds
bunch of mint
water or coconut water for desired consistency (usually about 1 cup)
N.B. This amount makes two generous portions of smoothie.
These ingredients form my base for the smoothie to give me the desired slow burn of energy, however if you have to hand any of the following items these can add another yummy and nutritious element to your smoothie:
1tsp coconut mana
1 tsp raw cacao powder
2 tbsp soaked almonds or cashew nuts
Combine all of the ingredients in a blender, my preferred choice is the Vitamix.
I’m always on the look out for a delicious coconut water to use in my smoothies. This summer I tasted the Aqua Coco coconut water at The Float Spa in Hove, UK and it’s my new favourite. Bottled at source in Thailand straight into a glass bottle, truly helps to capture the delicious fresh taste of the coconut. I used this 250ml bottle in this smoothie.
I like to store my smoothies in a glass jar especially when I have made enough for two. That way there’s always a fresh smoothie in the fridge for later when someone in the house is looking for an energy fuelled pick me up.
